Why You’ll Love This Strawberry Bruschetta
Ingredients at a Glance

For the Bruschetta
- Baguette. A French baguette provides a crispy, sturdy base for the toppings. Slice it into 24 pieces, about ½ inch thick, so each piece can easily hold the whipped ricotta and strawberry mixture. A baguette works well because the slices are appetizer size. For larger bruschetta, you can substitute a rustic Italian loaf, ciabatta, French loaf, or another crusty artisan bread.
- Olive Oil. Brushing the baguette slices with olive oil helps them toast until crispy. A small amount is also blended into the whipped ricotta for a smooth, creamy texture. We recommend extra-virgin olive oil for its flavor, but avocado oil can be substituted if needed.
For the Whipped Ricotta
- Whole Milk Ricotta Cheese. Whole milk ricotta whips into a smooth, creamy spread with a mild flavor that complements the strawberries. We strongly recommend whole milk ricotta. You can substitute mascarpone cheese for a richer, slightly sweeter spread.
- Honey. Honey lightly sweetens the ricotta without overpowering its delicate flavor. You can substitute maple syrup, if needed.
- Olive Oil. A small amount of olive oil helps create a spreadable consistency.
- Kosher Salt. A pinch of salt enhances the flavor of the ricotta and balances the sweetness of the honey. If you don’t have kosher salt, you can substitute a pinch of table salt.
For the Strawberry Topping
- Fresh Strawberries. Choose ripe, fragrant strawberries for the best flavor. Dice them into small, bite-sized pieces so they’re easy to spoon onto the bruschetta. Fresh peaches or nectarines make a delicious seasonal variation.
- Fresh Basil. Fresh basil adds a subtle herbal note that balances the sweetness of the strawberries. Fresh mint can be substituted for a different, but equally refreshing, flavor.
- Honey. A drizzle of honey enhances the natural sweetness of the strawberries and ties the flavors together. Maple syrup is a good substitute.
- Lemon Zest. Lemon zest adds brightness without introducing extra liquid that could make the bread soggy. Lime zest can be substituted if preferred.

Tips for Success
- Use ripe, in-season strawberries. Since strawberries are the star of this recipe, choose berries that are fragrant, deep red, and fully ripe for the best flavor.
- Toast the bread until it’s crispy. The baguette should be lightly browned and crisp enough to support the toppings without becoming soggy.
- Whip the ricotta until smooth. Don’t rush this step. Processing the ricotta until it’s light and creamy creates a silky spread that’s easy to spread.
- Drain excess juices. As the strawberry mixture rests, it will release some juice. Use a slotted spoon when assembling the bruschetta to keep the bread crispy.
- Assemble just before serving. To prevent the toast from becoming soggy, wait until you’re ready to serve before adding the ricotta and strawberry topping to the toasted bread.
