When the Arizona summer heat kicks in, I start craving cold, refreshing drinks that are easy to make and loaded with fresh fruit flavor. This strawberry basil agua fresca has quickly become one of my favorites. It’s light, refreshing, and just a little more special than your average fruit drink.

Fresh strawberries bring plenty of natural sweetness, while a few basil leaves add herbal flavor that brightens the drink without overpowering it. A splash of lime juice ties everything together and creates a drink that’s perfect for sipping on the patio, serving at a cookout, or enjoying alongside a leisurely weekend brunch.

One of the things I love most about this recipe is how simple it is. Tips for Success

  • Use ripe, flavorful strawberries. Since strawberries are the star of this recipe, the sweeter and more fragrant they are, the better your agua fresca will taste.
  • Don’t skip straining. Straining removes the seeds and pulp, giving the drink a smoother, more refreshing texture.
  • Expect some foam after blending. This is completely normal. Chilling the agua fresca for at least an hour allows the foam to settle before serving.
  • Press gently when straining. Use the back of a spoon or spatula to extract as much liquid as possible without forcing large amounts of pulp through the strainer.
  • Adjust the sweetness to taste. If your strawberries are especially sweet, you may be able to reduce the sugar slightly. If they’re tart, add a little more after tasting.

Ingredients

  • 1 pound fresh strawberries hulled
  • 4 cups cold water divided
  • ¼ cup granulated sugar
  • 2 tablespoons fresh lime juice
  • 3 to 5 large fresh basil leaves or to taste (Note 1)
