Fresh strawberries bring plenty of natural sweetness, while a few basil leaves add herbal flavor that brightens the drink without overpowering it. A splash of lime juice ties everything together and creates a drink that’s perfect for sipping on the patio, serving at a cookout, or enjoying alongside a leisurely weekend brunch.
One of the things I love most about this recipe is how simple it is. Tips for Success
- Use ripe, flavorful strawberries. Since strawberries are the star of this recipe, the sweeter and more fragrant they are, the better your agua fresca will taste.
- Don’t skip straining. Straining removes the seeds and pulp, giving the drink a smoother, more refreshing texture.
- Expect some foam after blending. This is completely normal. Chilling the agua fresca for at least an hour allows the foam to settle before serving.
- Press gently when straining. Use the back of a spoon or spatula to extract as much liquid as possible without forcing large amounts of pulp through the strainer.
- Adjust the sweetness to taste. If your strawberries are especially sweet, you may be able to reduce the sugar slightly. If they’re tart, add a little more after tasting.
- Serve very cold. Agua fresca is most refreshing when thoroughly chilled and served over plenty of ice.

Strawberry Basil Agua Fresca Recipe

Equipment
Ingredients
- 1 pound fresh strawberries hulled
- 4 cups cold water divided
- ¼ cup granulated sugar
- 2 tablespoons fresh lime juice
- 3 to 5 large fresh basil leaves or to taste (Note 1)

Instructions
- Add the 1 pound fresh strawberries, 2 cups of the water, ¼ cup granulated sugar, 2 tablespoons fresh lime juice, 3 to 5 large fresh basil leaves, and pinch of kosher salt to a blender.
- Blend until completely smooth. The mixture will be foamy, which is normal. (Note 2)
- Pour the mixture through a fine-mesh strainer into a large bowl. Use the back of a spoon or spatula to gently press the mixture against the strainer, extracting as much liquid as possible. Discard the solids. (Note 3)
- Transfer the strained mixture to a pitcher. Add the remaining 2 cups water and stir until combined. Add the sliced strawberries.
- Refrigerate for at least 1 hour before serving. This allows the foam to settle and gives the flavors time to blend.Serve well chilled over ice and garnish with basil leaves or lime slices, if desired.
Notes
- Start with 3 basil leaves for a subtle herbal flavor or use up to 5 leaves for a more noticeable basil flavor.
