Strawberry Basil Agua Fresca Recipe

This strawberry basil agua fresca is light, refreshing, and packed with fresh strawberry flavor. A few basil leaves and a splash of lime juice brighten the drink, making it perfect for hot summer days, brunches, cookouts, and backyard gatherings.

Ingredients

  • 1 pound fresh strawberries hulled
  • 4 cups cold water divided
  • ¼ cup granulated sugar
  • 2 tablespoons fresh lime juice
  • 3 to 5 large fresh basil leaves or to taste (Note 1)
  • pinch of kosher salt
  • sliced strawberries for serving
  • ice for serving

Instructions

  • Add the 1 pound fresh strawberries, 2 cups of the water, ¼ cup granulated sugar, 2 tablespoons fresh lime juice, 3 to 5 large fresh basil leaves, and pinch of kosher salt to a blender.
  • Blend until completely smooth. The mixture will be foamy, which is normal. (Note 2)
  • Pour the mixture through a fine-mesh strainer into a large bowl. Use the back of a spoon or spatula to gently press the mixture against the strainer, extracting as much liquid as possible. Discard the solids. (Note 3)
  • Transfer the strained mixture to a pitcher. Add the remaining 2 cups water and stir until combined. Add the sliced strawberries.
  • Refrigerate for at least 1 hour before serving. This allows the foam to settle and gives the flavors time to blend.
    Serve well chilled over ice and garnish with basil leaves or lime slices, if desired.

Notes

  1. Start with 3 basil leaves for a subtle herbal flavor or use up to 5 leaves for a more noticeable basil flavor.
  2. Blending creates a layer of foam on top of the mixture. This is normal. Chilling the agua fresca for at least 1 hour allows the foam to settle naturally and gives the strawberry and basil flavors time to meld. If desired, skim off any remaining foam before serving.
  3. Straining removes the seeds and pulp, creating a smoother, more refreshing drink. Discard the solids left in the strainer.
Storage
Store covered in the refrigerator for up to 2 days.
Stir well before serving, as natural separation is normal.
This agua fresca can be prepared several hours in advance and refrigerated until ready to serve.
