This refreshing pineapple celery juice will definitely leave you feeling sad when it’s all gone. The good news is that this is a quick, easy, and simple recipe, so it’s no trouble to make more! Granted, it is some trouble cleaning out the juicer, but this delicious juice is absolutely worth it!

  • 1 medium pineapple. Peeled and chopped. Save yourself the trouble and don’t bother removing the core. A good juice extractor can handle it.
  • Celery. Since this is called pineapple celery juice, as you can imagine, this recipe uses ample celery.
  • Mint leaves. Mint leaves add a touch of bright, fresh flavor.
  • Medium lemon. Be sure to peel the lemon before adding it, to avoid getting any of the bitter white pith in your juice.

Instructions

To make this juice, simply push all ingredients through a juice extractor into a jug, one at a time, as illustrated in the steps below. Alternatively, you can blend the ingredients in a high speed blender and strain the juice through a fine mesh strainer.

    Storage

    1. Refrigeration. Pour the juice into an airtight glass container, such as a mason jar, and seal it tightly. Store it in the refrigerator and drink it within 24-48 hours for the best flavor and nutritional value.
    2. Separation. Natural separation may occur as the juice sits. Before drinking, give the juice a good shake or stir to recombine the ingredients.
    3. Freezing. If you want to store the juice for a longer period, you can freeze it in an ice cube tray. Once frozen, transfer the cubes to a freezer-safe bag or container. Use the frozen juice cubes within 1-2 months. Thaw them in the refrigerator or add them directly to smoothies or drinks.
    4. Avoid Heat Exposure. Keep the juice away from heat and direct sunlight, as exposure to heat can degrade the nutrients and affect the taste.

    Equipment

    Blender You can use a high speed blender instead of a juice extractor.
    Mesh strainer The mesh strainer is used to strain the juice if you are using a high speed blender instead of a juice extractor.

    Ingredients

    • 1 medium pineapple Peeled and chopped. No need to remove the core.
    • 6 stalks celery
    • ¼ cup mint leaves Loosely packed.
    • 1 medium lemon Peeled.

    Instructions

    • Push pineapple, celery, mint, and lemon through a juice extractor into a jug, alternating ingredients. Stir with a rubber spatula to blend. See Note below.

    • Chill and serve over crushed ice. Top with fresh mint sprigs, celery greens, and lemon slices.

    Notes

    If you don’t have a juice extractor, you can use a high speed blender to blend the ingredients. Then you can use a mesh strainer to strain the juice.
