Can I make this in the oven instead of on the stovetop?

Yes. After searing the chicken and toasting the rice, stir in the broth, lemon, tomatoes, and olives as usual. Nestle the chicken on top, cover tightly with a lid or foil, and bake at 350 F (175 C) for about 25–30 minutes until the rice is tender and the chicken is cooked through. If your oven runs dry, you can add a splash of broth toward the end.

Can I make this spicy?

Definitely. Add ¼–½ teaspoon red pepper flakes with the oregano or stir in a bit of harissa or finely chopped fresh chili with the tomatoes and olives. Start small. It’s easy to add more heat at the table.

What if I don’t like tomatoes?

You can leave them out. To make up for the moisture they provide, add an extra 2–4 tablespoons of broth so the rice still cooks properly. The dish will be a bit less juicy but still flavorful, especially with the lemon and olives.

Yes. Use 2 chicken thighs, ½ cup rice, and ¾ cup broth, and roughly halve the add-ins (tomatoes, olives, lemon). Use a smaller skillet (8–9 inches) so the rice stays in a relatively even layer. The cook time will be similar. Just start checking a couple minutes earlier.
