It makes me happy every time I open the refrigerator in the morning and see these lovely little berry yogurt parfaits sitting there waiting for me. It means that I have a delicious and healthy breakfast ready to go.

These little guys are great anytime, but imagine bringing them to a 4th of July BBQ or birthday party. They’re so festive and colorful! Those beautiful colors also mean that they’re loaded with many of the nutrients that our bodies need.

Ingredients

  • Chopped strawberries (1 cup). If you’re not making these parfaits when strawberries are in season, I recommend purchasing frozen strawberries and defrosting them in the microwave. Because frozen strawberries are frozen at the peak of ripeness, you will reap the benefit of the best flavor.
  • Honey (2 tablespoons). For sweetening.
  • Vanilla extract (1 teaspoon). For flavor.
  • Plain Greek yogurt (2 cups). Be sure to use plain unflavored Greek yogurt. Greek yogurt is best for these parfaits because it’s thicker than regular yogurt. It also has more protein and less sugar. (source)
  • Granola (1 cup). Homemade granola is super easy to make. Why not give our Cherry Vanilla or Blueberry Granola recipes a try? You will avoid the preservatives and added sugar that you will find in store bought granola. You can enjoy the leftovers with a bowl of milk or use it as a yogurt or ice cream topping, or healthy snack.
  • Fresh blueberries (1 cup). Use fresh blueberries here for the best presentation. Thawed frozen blueberries will not look as nice.

Step 1. Add strawberries, honey and vanilla to a small bowl.

Mash with the back of a fork until strawberries begin to break up and mixture resembles a chunky syrup.

Step 2. Divide the berry mixture evenly among four small mason jars or glasses.

Step 3. Spoon the yogurt on top, dividing equally.

Storage Instructions

Berry Yogurt Parfaits are best enjoyed fresh to maintain their optimal texture and flavor. However, if you need to store them for a short period or prepare them in advance, here are some storage instructions:

  • Refrigeration. If you assemble the parfaits in advance, store them in the refrigerator. Use airtight containers or cover the mason jars tightly with lids or plastic wrap to prevent the yogurt from absorbing any odors and to maintain freshness.
  • Separate Components. Consider storing the components separately if you plan to assemble the parfaits later. Keep the mashed berry mixture, yogurt, granola, and blueberries in separate containers. Assemble the parfaits just before serving to maintain the crispness of the granola.
  • Prevent Sogginess. If you are storing the parfaits for an extended period, such as overnight, layer the ingredients strategically. For example, place the granola on top of the yogurt to help prevent it from becoming too soggy.
  • Granola storage. If the granola tends to lose its crispness, you can store it separately in an airtight container and sprinkle it over the parfaits just before serving.
  • Honey Drizzle. If you’ve drizzled honey over the berries, be aware that it may settle at the bottom over time. Consider keeping the honey separate and drizzling it just before serving.

Freshness Tips


  • Assemble just before serving. While yogurt parfaits can be stored, it’s important to note that the texture may change over time, especially when granola comes into contact with yogurt. Enjoying them promptly after assembly ensures the best taste and texture.
  • Keep components separate. Store the mashed berry mixture, yogurt, granola, and blueberries separately until you’re ready to assemble the parfaits. This prevents the granola from absorbing moisture from the yogurt.
  • Individual Portions. If preparing individual servings in mason jars, cover them tightly to preserve freshness. This allows for convenient grab-and-go portions while maintaining the integrity of each parfait.

FAQs

Yes you can. If you want to make them ahead, I recommend assembling them in a jar that has a lid so that the blueberries don’t dry out in your fridge. These small mason jars (affiliate link) would work well.

Follow the expiration date on the Greek yogurt that you used to make them. Your yogurt parfaits will keep as long as that.

Yes you can. Assemble them as instructed, but omit the granola. Leave about an inch at the top for expansion and close them tightly with a lid. They will keep for up to a month. Thaw them in the refrigerator then sprinkle the granola over the top.
