Dill Roasted Potatoes Recipe

- 1½ pounds baby gold potatoes halved (quarter any large ones) (Note 1)
- 2 tablespoons olive oil
- ¾ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons fresh dill chopped
- 1 teaspoon fresh lemon juice optional
Oven Method
Preheat the oven to 425 F (220 C).Line a baking sheet with aluminum foil or parchment paper, if desired. In a large bowl, toss the halved (or quartered) 1½ pounds baby gold potatoes with 2 tablespoons olive oil, ¾ teaspoon salt, ¼ teaspoon black pepper, and 1 teaspoon garlic powder until evenly coated.
Arrange the potatoes cut-side down in a single layer on the baking sheet. (Note 2)Roast for 25–30 minutes, flipping halfway through, until golden brown and fork-tender.
Air Fryer Method
Preheat the air fryer to 400 F (200 C).
In a large bowl, toss the halved (or quartered) potatoes with olive oil, salt, pepper, and garlic powder (if using).
Arrange in a single layer in the air fryer basket without overcrowding. Cook in batches if needed.Air fry for 15–18 minutes, shaking the basket halfway through, until golden in color and slightly crispy.
Both Methods
While still warm, gently toss the potatoes with 2 tablespoons fresh dill and 1 teaspoon fresh lemon juice (if using). (Note 3)Transfer to a serving dish. Garnish with extra dill and a sprinkle of flaky salt, if desired.
