Ingredients

  • 4 large flour tortillas
  • 2 cups cooked chicken breast shredded or diced
  • ½ cup pesto sauce
  • 2 cups mozzarella cheese shredded
  • 1 cup cherry tomatoes diced
  • ¼ cup fresh basil leaves chopped
  • Cooking spray or butter for greasing the pan

Instructions

  • Lay out the flour tortillas. On one half of each tortilla, layer the pesto chicken mixture, shredded mozzarella, diced cherry tomatoes, and a sprinkle of chopped basil.

  • Fold the empty half of the tortilla over the filling to create a half-moon shape.
  • Heat a large skillet over medium heat and lightly grease with cooking spray or butter. Cook each quesadilla for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted.
