Let's start with the sauce. This sandwich deviates from tradition a little bit in that it does not use a Béchamel sauce. We opted instead to use a cheesy mornay sauce with tasty results!

Gradually whisk in the warm milk, raise the heat to medium, and bring to a gentle boil, whisking frequently.

Arrange the bread slices in a single layer on a baking sheet and bake, turning once, until toasted on both sides.

Melt butter on a griddle or large skillet over low-medium heat. Crack eggs onto surface, season with salt & pepper, cover, and cook until yolks are set to your liking.

Spread Dijon mustard on toast slices, dividing evenly.
