Peach Compote

This delicious homemade fresh peach compote comes together on your stovetop in 15 minutes or less. It's the perfect topping for pancakes, waffles, French toast, crepes, yogurt, or peanut butter toast.

Ingredients

  • 2 cups fresh peaches Chopped into ½ inch squares. This is about 3-4 medium peaches.
  • cup granulated sugar
  • 2 teaspoons fresh lemon juice The juice from one small lemon.

Instructions

  • Combine all ingredients in a medium non-reactive saucepan (stainless steel, ceramic or glass) over medium heat. Bring mixture to a boil stirring constantly.
    2 cups fresh peaches, ⅓ cup granulated sugar, 2 teaspoons fresh lemon juice
  • Reduce heat to low and simmer for 10 minutes, stirring occasionally. Remove from heat and allow to cool.
