Cinnamon Sugar Topping
- ¼ cup granulated sugar
- 1 tablespoon ground cinnamon
Waffles
- 1¾ cup all-purpose flour
- 2 tablespoon light brown sugar
- 2 teaspoon Cream of Tartar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 large eggs
- 1¾ cup buttermilk
- ½ cup butter melted and cooled to room temperature
- 1 teaspoon vanilla extract
Waffles
In a medium mixing bowl, sift dry ingredients together.
In a separate bowl with a handheld mixer, beat together the eggs, buttermilk, melted butter, and vanilla until frothy, about two minutes on high speed.
Pour the wet ingredients into the dry and stir until nearly smooth. Do not overstir - a few small lumps are okay,
Add 1 to 1-½ cup batter to waffle iron and cook according to manufacturer's instructions, about 5 minutes.
While waffle is still hot, sprinkle cinnamon sugar topping on both sides of waffle. Repeat last two steps until batter is gone.
