Place ricotta in a medium bowl and whisk until ricotta is light and fluffy. 3 tablespoons ricotta cheese Toast brioche. 1 slice brioche bread Spread whipped ricotta evenly over toasted bread. Carefully lay strawberries in a horizontal line across the top of the toast. ¼ cup strawberries Repeat with the mango, below the strawberries. ¼ cup mango Add blueberries below the mango. ¼ cup blueberries Sprinkle granola over the top and drizzle with honey.
