Brioche Perdu (Brioche French Toast)

This delicious brioche perdu (aka brioche French toast) is light, buttery and super simple to make. It takes advantage of ready made brioche bread for a carefree and tasty breakfast or brunch!

Ingredients

  • 3 large eggs
  • ¾ cup milk
  • ¾ teaspoon granulated sugar
  • ½ teaspoon vanilla extract You can also use an equal amount of vanilla paste.
  • ¼ teaspoon ground nutmeg
  • 8 slices brioche bread ½-inch slices
  • 2 tablespoons butter

Instructions

  • Heat a griddle or large skillet over medium heat.
    Add eggs, milk, sugar, vanilla, and nutmeg to a blender and blend for 30 seconds to 1 minute.

  • Pour mixture into a shallow baking dish.
  • Pierce the bread slices all over with a fork. Add a few bread slices to the egg mixture and turn slices until evenly coated.
    8 slices brioche bread
  • Add butter to the griddle or skillet. Add the slices of bread in a single layer and cook until the undersides are golden brown, about 4-5 minutes. Turn and cook the other sides about 3-4 more minutes.
    2 tablespoons butter
  • Repeat step 4 with remaining bread and egg mixture.
    Serve immediately, dust with powdered sugar and drizzle with warm maple syrup.
