Fish Stew

Hearty and healthy fish stew made with white fish and tons of fresh veggies. The ultimate comfort food!

Ingredients

  • 2 tablespoon butter
  • 1 large onion chopped
  • 2 teaspoon minced garlic about 4 cloves
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 15 oz. can diced tomatoes
  • 1 6 oz. can tomato paste
  • 1 teaspoon herbes de Provence
  • 2 bay leaves
  • salt and pepper
  • 1-½ cup dry white wine
  • 1 medium potato cubed
  • 2 carrots sliced
  • 1-½ lbs white fish fillets cod, halibut, or snapper
  • fresh parsley

Instructions

  • Melt butter in a large soup pot. Add onion, garlic, and bell peppers. Saute until softened.
  • Add tomatoes, tomato paste, seasonings, wine, potato and carrots. Cover and simmer until the potato and carrots are tender, about 45 minutes. Add the fish and simmer for another 5-10 minutes until the fish flakes. Remove the bay leaves. Serve in warmed bowls and garnish with fresh parsley. Tastes great served with crusty bread.
