Linguine with Prosciutto Tomato Sauce

Ingredients

  • 8 oz. linguine
  • 3 tablespoon olive oil extra virgin
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 oz. prosciutto thinly sliced and coarsely chopped
  • 2 15 oz. cans diced tomatoes with Italian herbs
  • 4 tablespoon fresh basil coarsely chopped and divided
  • 2 tablespoon capers
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Cook linguine according to package instructions. Set aside.
  • In a large saucepan, add olive oil over medium heat. Add onion and saute for 3-4 minutes or until translucent. Add garlic and chopped prosciutto. Saute for 1-2 minutes or until garlic is light golden brown. Lower heat, add tomatoes and 2 Tbsp. basil, and simmer uncovered for 25 minutes. (If the mixture seems too thick, add a little bit of water.) Stir in the remaining basil, capers, salt and pepper. Simmer for two minutes.
  • Add pasta to warmed bowls and top with sauce.
