Ricotta Toast
This healthy and delicious ricotta toast is super easy to make and takes advantage of fresh fruit for a simple and refreshing breakfast. Don't let its size fool you. Thanks to the ricotta, it contains 12 grams of protein which will leave you feeling full and satisfied longer. This is an excellent summertime breakfast treat!

- 3 tablespoons ricotta cheese Whipped.
- 1 slice brioche bread
- ¼ cup strawberries Sliced and quartered.
- ¼ cup mango Diced.
- ¼ cup blueberries
- 2 tablespoons granola
- honey
Place ricotta in a medium bowl and whisk until ricotta is light and fluffy.
3 tablespoons ricotta cheese
Toast brioche.
1 slice brioche bread
Spread whipped ricotta evenly over toasted bread.
Carefully lay strawberries in a horizontal line across the top of the toast.
¼ cup strawberries
Repeat with the mango, below the strawberries.

Add blueberries below the mango.

Sprinkle granola over the top and drizzle with honey. Slice toast into thirds to make it easier to eat.
