How to Make a Greek Omelette

Add olive oil to non-stick skillet over medium heat.
Add garlic and cook until fragrant.
Add chickpeas and cook until lightly browned.
Add eggs, salt and pepper to a blender. Blend for about 1 minute.
Melt 1 tablespoon butter in skillet over medium heat.
Add half of egg mixture and cook until edges begin to set. Lift edges and tilt the pan.
Sprinkle 1/2 of the chickpeas and vegetables on one side of the omelette.
Using a wide spatula, fold the untopped half of the omelette over the filled half.
