Over Easy

Over easy eggs are cooked in a skillet or on a griddle. The whites should maintain a smooth and glossy finish and the yolks should be runny.

Over Medium

Over medium eggs are cooked like over easy, but they are cooked just slightly longer to allow the whites to cook through while maintaining runny yolks.

Over Hard

Over hard eggs are cooked on a skillet like over medium. However the yolks are broken and allowed to cook through, leaving no runny yolk.

Sunny Side Up

This is probably the easiest method because there is no flipping involved. You simply crack the eggs into a skillet and let them cook. Most people prefer runny yolks.

Basted

This method is similar to sunny side up, except it uses steam to create a thin film of egg white over the yolk. It's a lovely alternative to poached eggs and looks lovely.

Poached

This method involves a deep skillet or saucepan and water. Eggs are cooked in just barely simmering water. Most of the time yolks are left runny. However, they can be cooked longer for a yolk that's cooked through.

Whipped

The whipped method is used to make omelets and frittatas. This is great if you want a more hearty breakfast or something special for brunch, lunch, or dinner. You can add just about any savory filling to make a complete meal.

Scrambled

Scrambled eggs is one of the easiest cooking methods. Simply lightly beat 2-3 eggs in a small bowl, add the mixture to a buttered non-stick skillet, allow to cook for a minute or two, then begin stirring until eggs are mostly set.

Hard (or Soft) Cooked

The usefulness of a hard cooked egg seems to have no end. From slicing them up to top off a salad, to using them to make egg salad or deviled eggs, to simply having them on hand as a grab-and-go breakfast or healthy snack, this is a cooking method that you definitely want to have in your back pocket.
