How to Make Cranberry Orange Bread

Unsalted butter.Large eggs.Light brown sugar.Large oranges.All-purpose flour.Baking powder.Baking soda.Salt.Cinnamon.Greek yogurt.Vanilla extract.Dried cranberries.Chopped pecans. 

Step 1

Get the recipe

Add the butter, eggs, brown sugar, and orange zest to the bowl of a stand mixer and mix until well-combined. Set aside.

In a separate medium bowl, sift together the flour, baking powder, baking soda, cinnamon, and salt.

Slowly add the dry ingredients to the wet ingredients and mix on medium speed until just combined. Don't overmix.

Add the yogurt, vanilla, and reserved orange juice and mix again until incorporated.

Stir in the cranberries and pecans.

Pour batter into prepared pan and bake for 45 to 50 minutes or until a skewer inserted in the middle of the loaf comes out clean.

Allow to cool on a wire rack.

Enjoy with a glass or milk or a cup of coffee or tea! Slice and store in a freezer safe bag, and seal tightly. They will keep in the freezer for up to 3 months.
