A wonderful alternative to roasting a whole turkey for Thanksgiving. A mixture of tart apples, onions and spinach is wrapped up in a turkey breast tenderloin, and covered with seasoned bread crumbs. It would also make a great dinner for any time of year!
In a large skillet, saute the apple and onion in olive oil until tender. Remove from the heat and stir in spinach, bacon, lemon zest, lemon juice, 1/4 tsp. salt and nutmeg.
Make a lengthwise slit down the center of the tenderloins, but do not cut all the way through. Open the tenderloins so that they lie flat. Cover with plastic wrap and pound until 1/4 inch thick. Remove plastic wrap and season with pepper and remaining salt.
Spread spinach mixture over tenderloins to within 1/2 inch of edge. Roll up like a jelly roll starting with a short side. Tie up with kitchen twine. Place the egg and bread crumbs in separate shallow bowls. Dip the tenderloins in the egg and then roll in the bread crumbs.
Place in a baking dish coated with cooking spray and bake in a 375 degree F oven for 40-45 minutes or until a thermometer reads 165 to 170 degrees F. Let rest for 5 minutes before slicing.
