Yep, it’s November, ready or not, and here in the United States that means that Thanksgiving is right around the corner. I decided to do a series of recipes that would work on a traditional Thanksgiving table, but are quick and easy. Let’s face it. This is a busy, busy time of year and the last thing any of us needs are recipes that take hours to make or days of preparation. Many of the recipes I will be sharing with you are also suitable for a small group. I grew up in a huge family and our holiday feasts were actually feasts. We had to cook in bulk. Now my household consists of just my mother and myself. Since our extended family does not live nearby, our Thanksgiving cooking had to be scaled way back. I discovered that it’s hard to find Thanksgiving recipes that just feed two to four people. I have no desire to eat Thanksgiving fare well into December!
I will be tagging these recipes Easy Thanksgiving so that you can easily find them for this year and the years to come. I know that many of you do not live in the United States, so these recipes are just as delicious and suitable for any time of year. We won’t be roasting a turkey, but we may make a turkey roulade – a nod to Thanksgiving but easily enjoyed anywhere at any time of year.
Let’s start with these tasty green beans. Seriously, their preparation couldn’t be simpler. You’ll start with washing and trimming the beans. Steam them in a little water. It only takes 4 minutes. Toast or roast some hazelnuts, then chop them. Chop up some Italian parsley. Zest a lemon. Squeeze the juice. Mince a garlic clove, or you can do what I do and buy a jar of minced garlic and keep it in the refrigerator. Toss everything together and you’re done. In my instructions I said that all of this will take 20 minutes, but I bet you’ll have it done in less time. This is my kind of Thanksgiving side dish. Delicious, easy and quick!
